Autoformación mediante figuras representativas para ser utilizadas en la metodología Hazzard.

Abstract

Este trabajo evidencia mediante fotografías y un flujograma, el flujo del proceso tecnológico de las carnes bovinas y permite identificar los puntos críticos establecidos en la Metodología Hazzard, a través del proceso de autoformación. Para ello, se tomaron fotografías durante el proceso de faenado de las carnes en una sala del Instituto de Investigación de la Industria Alimenticia, se aplicó el método empírico investigativo en las consultas a otros autores sobre dicha metodología y confección de flujograma. Las figuras representativas de este proceso facilitan la autoformación de los estudiantes, permiten identificar y ubicar con mayor precisión los puntos críticos del proceso. No es necesario visitar la industria para aplicar la metodología. Constituye un medio de enseñanza eficaz  de bajo costo.

Abstract

This work evidences by means of pictures and a flujograma, the flow of the technological process of the bovine meats and it allows to identify the critical points settled down in the Methodology Hazzard, through the autoformatión process. For it, they took pictures during the process of faenady of the meats in a room of the Institute of Investigation of the Nutritious Industry, the investigative empiric method was applied in the consultations to other authors on this methodology and flujograma making. The representative figures of this process facilitate the autoformatión of the students, they allow to identify and to locate with more precision the critical points of the process. It is not necessary to visit the industry to apply the methodology. It constitutes a means of effective teaching of low cost.
